When did we start giving these cute winged weightless creatures so much weight?
These proverbial butterflies that start beating a staccato rhythm in the stomach, when faced with danger, like a high stakes first date or a particularly nervy presentation, are actually flight or fight signals your body is sending to you after your brain has altered your body (hello adrenal!) that there’s something to worry about out there.
Adrenalin pumped through into your muscles and blood stream, causes a rapid heart rate, and blood to flow rapidly to your brain and lungs (in case you need to, well make a mad dash or stay and fight), and that reduces the blood in your stomach, causing, you guessed it, that butterfly like feeling.
The gut-brain axis has become an important point of conversation in research around the disease. Our gut and brain are in constant contact with each other. Science is now confirming the benefits of fermentation in gut health and centuries-old wisdom passed down as proof of its success by our ancestors.
Around 100 billion neurons (the little guys that tell your body how to behave) in your brain are in touch with 500 million of its siblings in your gut. Of these, the Vagus Nerve that runs between the brain and the gut is the most important. When this nerve is not functioning at an optimum, we see increased instances of IBS and Crohn's disease, that are just at the top of a number of other lifestyle diseases.
The other important connection is between neurotransmitters produced in our brain and gut that control emotions and feelings. These include (our favourite) serotonin, norepinephrine, epinephrine and (hey) dopamine.
These neurotransmitters regulate and control not only blood flow, but also effect gut motility, nutrient absorption, gastrointestinal innate immune system, and the microbiome.

The Tea of Immortality
Set your clocks back thousands of years to 221 BC, at the start of China’s Qin Dynasty, to Northeast China (then called Manchuria) where brewers figured out how to use a gelatinous disc called SCOBY or a Symbiotic Cultures of Bacteria and Yeast to ferment sugared tea. They called this the “Tea of Immortality”. Other origin stories point at kombucha being named after Dr. Kombu, a Korean physician who brought the tea to Japan as a remedy for Emperor Inkyo.
221 BC is also how 2/21 became the date for World Kombucha Day. 🤓
In the early 20th century our drink made it to Russia (“Kambucha”), Germany (“Kombuchaschwamm”), where it was consumed during WW1, and eventually other parts of Europe.
It was often compared to yogurt for its health benefits (hi! probiotics), and while there was no medical proof, research still claimed that the drink could detoxify the blood, regulate appetite and help keep your intestines well-maintained. A good gut, being the largest immune organ in your body, equals a healthy immune system, smoother digestion (plus a blooming gut flora) and even helps with your mood. Somewhere in the 1990s, Sandor Katz, the Godfather of Fermentation and author of The Art of Fermentation, made kombucha his special raison d'etre, and his research helped teach interested folk more about this magical tea. Modern media sadly persists in calling kombucha “new-agey” and “trendy”, but the tea is prehistoric, similar to other forms of fermentation.

Kombucha has a natural effervescence, a by-product of fermentation, that is more delicate than soda. It has a slight funk from the fermentation, the good James Brown/Stevie Wonder/Sly and The Stone kind, and a bite that comes from all the organic acids formed as another by-product of the fermentation that help detoxify and cleanse our body.
